Well it’s that time of year again, I’ve been limbering up for weeks! I’ve carb loaded on Porridge, got my kit ready – my fav Howies t-shirt and now as I prepare to take my seat… on the sofa! And reeeeach for the remote I cry “Vive Le Tour”!
Yes I do tend to get a bit excitable for two weeks every July as I tirelessly sit on the sofa for a fortnight to watch the The Tour de France, the greatest cycling event on the planet. Of course it’s hungry work watching those lycra clad men climb hills and powering the flats so what better way to refuel than a new Porridge recipe, Domestique’s take note! 😉
Red, White & Blueberry Porridge
Serves: One hungry spectator
Cooking & preparation time: 7 mins
Skill level: Easy
This recipe uses jumbo oats which have a lower G.I. rating than fine, quick cooking oats. This will help keep your blood sugar stable and keep hunger at bay for a bit longer.
Blueberry’s are packed with antioxidants, if you train hard to need to protect your body from free radicals. In this recipe I use fresh blueberries and a purée to get an extra hit. Sugar free spreads/purèe’s are handy for healthy Porridge toppings.
Strawberry’s are seasonal, naturally sweet and bring the British side of the Entente Cordiale to this french cycling inspired Porridge.
- 1 cup (about 40g) jumbo oats
- 1 cup of semi-skimmed milk
- 1 cup of water
- 1/3 teaspoon vanilla extract
- 1 tablespoon of blueberry puree (I used Meridian fruit spread)
- 1 cup strawberries, washed, chopped & pitted
- 1/2 cup washed blueberries
Place the oats, water and milk into a deep saucepan.
Put the saucepan over a high heat and bring the oats to the boil.
Reduce the heat to a simmer and cook the oats for 3 mins, stirring constantly.
Add the vanilla extract to the cooking oats.
Continue to cook for a further minute, or until you have a nice Porridge consistency.
Pour the Porridge into a bowl.
Swirl in the tablespoon of blueberry spread.
Garnish with the washed strawberries and blueberries.
Sit back and enjoy Le Tour!
