I’ve been finding it hard to get up and go on these grey mornings. Cold, damp and dark is a hard start to an early morning. So I thought it was time to write a recipe with a bit of zing and a lot of colour.
Passing the greengrocers the other morning I spied some fantastic looking pomegranates, which was all the inspiration I needed for a new Porridge. Packed with vitamin C and lots of lovely red seeds, Pomegranates are a welcome fruit in winter.
I think the seeds are like little winter jewels so I hope you enjoy this bejeweled breakfast and I hope it will get you too, out of bed on a winters morning.
Pomegranate Porridge, a bejewelled breakfast
Preparation & cooking time: 8 mins
1/2 a Pomegranate
1 1/2 cups jumbo oats
1 cup water
2 cups milk
1/3 teaspoon vanilla extract
2 dessertspoons maple syrup
Remove the seeds from half a pomegranate and set aside.
Into a saucepan place the oats, water and milk and stir thoroughly.
Place the saucepan over a high heat and stirring constantly, cook for 2 mins.
Reduce the heat to a simmer.
Stir in the vanilla extract.
Continue to cook the oats for 3-4 mins or until you have a nice thick and creamy Porridge consistency.
Remove the saucepan from the heat.
Pour the porridge into two bowls.
Bejewel the Porridge with the Pomegranate seeds and drizzle the maple syrup.
Enjoy a hot and colourful Porridge on a cold winters morning.
